Inside the Porthole:
- 130g cucumbers (2 mini cucumbers), washed and sliced into round or oval slices
- 2-3 sprigs of fresh mint, leaves washed
Liquid to be Added:
- 1¾ oz (50 ml) freshly squeezed lime juice (about 1 lime)
- ½ oz (15 ml) simple syrup
- 8½ oz (250 ml) your favorite gin
To Assemble and Serve:
Arrange the infusion ingredients inside the Porthole. Close the Porthole, tighten screw, and check the seal for good contact on both sides.
Next, combine the liquid ingredients with ice in a cocktail shaker or Mason jar. Shake until chilled. Transfer this mixture into the assembled Porthole through the spout.
This cocktail is best when infused at least 1 hour, up to around 4 hours.
Tips:
- A well-sealed Porthole can be refrigerated.
- This infusion can be served simply over ice, or topped with chilled sparkling or tonic water for some extra snazz.
- Experiment to make this your own! White rum could be a nice substitute, or tequila/mezcal.
