This year, we helped put the United States on the culinary map of the world, contributed to transforming the way we cook at home, and continued our collaboration that has changed the way we all think about the cocktail experience. In short, we had a great 2017 and hope you did too. Catch up on the highlights from our past year below.
Winning Gold with Team USA at Bocuse D’Or
After 9 months of intense work, Team USA won the gold medal at Bocuse d'Or for the first time in the competition's 30 year history! Our role was to develop a number of custom tools and design the team’s winning presentation. An in depth story about this epic journey is told in Chasing Bocuse, a newly released book by Philip Tessier, including three short essays by Martin Kastner.
It was a privilege to work with the highly talented Team USA and we are honored to be back for the Bocuse d’Or 2019 effort with candidate chef Matthew Kirkley (Coi, San Francisco) and commis Mimi Chen. Be a part of this journey and support the Ment’or BKB Foundation. This non-profit was created to build a sustainable community of young American culinary professionals, and among its other activities also coordinates the Team USA’s efforts. Next step on our journey to Lyon is the Selection of Americas, a continental qualifying round taking place in Mexico City in April 2018.
Hestan Cue Smart Cooking
Crucial Detail was involved in the development of Hestan Cue. Hestan Cue, a smart system allowing precise cooking control at home, went on sale in the first half of 2017 and has been helping redefine what smart cooking will become. This was not a typical project for us as we only consulted on some of the aspects of the product, but it’s been exciting to observe it enter the marketplace and garner great reactions from the press and general public. While many of us share the love of the flame, precise control and energy efficiency of these new technologies is going to completely transform the way we think of cooking and most importantly elevate the level of consistency and quality for the everyday home cook.
The Aviary NYC
Throughout 2017, Crucial Detail reproduced many of our original cocktail designs for the opening of The Aviary at the Mandarin Oriental in New York City. The Aviary NYC opened in September to many rave reviews. The execution and service at The Aviary’s second location is as stellar as their first one in Chicago and we are glad a selection of our designs plays a supporting role in this unparalleled experience. If you find yourself in NY with a little time to enjoy a luxurious cocktail and a bite in a wonderful setting overlooking Columbus Circle and the south-west corner of Central Park, make a reservation and check it out! 2017 Porthole Recipes
We continue to develop interesting new infusions for the growing Porthole user community. We will be releasing more exciting recipes in 2018: our own and collaborations with chefs and mixologists.
